A wonderful client shared this recipe with me and I cannot believe how delicious it is. She wanted to make something cool and refreshing for summer. It was inspired by a pie her coworker brought to work that was too heavy and sweet because of condensed milk. This version is light, airy, and definitely Lynn approved. - Graham cracker pie shell
- Strawberries- cut up
- Handful of almonds- chopped
- 3 tablespoons of Stevia in the raw
- Lemon juice
- 1 8-oz container Greek vanilla yogurt
- 1 tub Tru whip
- 8 oz. whipped cream cheese
Chop a handful of almonds and spread on graham cracker crust.
In a bowl, mix the Tru whip, cream cheese, yogurt, Stevia, and lemon juice with spoon until well blended
Spread thin layer of mixture over crust, then layer strawberries and blueberries.
Spread remaining mixture on top of fruit. Sprinkle more chopped almonds on top.
