Chicken Enchiladas

Here is another great recipe that makes use of shredded chicken. You can either use my shredded chicken recipe (link below) or if you’re in a rush, grab a Costco chicken.

I tend to think of enchiladas as a complicated recipe that takes all day to cook. NOT these! These are literally on the table in less than twenty minutes!

Ingredients:

  • 1 1/4 cup of shredded chicken
  • 1/2 cup of plain Greek yogurt
  • 2 tbsp. low sodium taco seasoning
  • 1 can Diced Green Chilies
  • 4 tortillas of choice (I used spinach tortillas)
  • Optional: 1/4 cup of shredded cheese.

Instructions:

Preheat oven to 350 degrees; line a 13x9 baking dish with foil and spray with non-stick spray. (I use coconut oil.)

In a bowl combine shredded chicken, Greek yogurt, 1/2 the can of green chilies, and taco seasoning. Mix well. 

Scoop about a heaping 1/4 cup of the mixture into the middle of your tortillas. Roll up like a burrito and place in your lined baking dish. 

Once you've filled and rolled up all your tortillas, using a tablespoon use the rest of the green chilies and smother your enchiladas. Optional: sprinkle a little cheese on the top of the green chili smothered enchiladas.

Place in the oven, uncovered, and bake for 15 minutes, and enjoy!
