One of the biggest things we hear is about how people don&'t have time to eat healthy. They don't have time to stand in the kitchen and slave over a hot stove to prepare something healthy for their family to eat. This is when food prep is so important, but again, many people say they don't have time to prep so many meals for the week for their families, or their families don't want to eat the same thing a few days in a row. Well here's a great, non-time consuming way that you can make your week of cooking much easier!
A great staple ingredient to have around for quick and easy dinners is chicken. There are SO MANY different meals you can make with chicken! So here are some recipes for you to use with an easy shredded chicken that will give you a few totally different meals each night of the week.
- 3 lbs. Chicken breast (fresh or frozen is fine.)
- 1 cup of free range low sodium chicken broth
- 2 cups of water
In your slow cooker, place the chicken, broth, and water.
Cook on high for 4 to 5 hrs or low for 8 to 10.
When chicken is done, place in a large bowl. Using 2 forks, pull chicken apart, shredding against the grain.
Save for up to a week in the refrigerator or freeze 1-2 cups worth in freezer bags for later use.
